Other than being a little nerdy and a total bookworm, I was a typical 90s kid. I collected Beanie Babies, rocks, and gel pens. My favorite movies were Mary Poppins, Hocus Pocus, and Fantasia. My diet mostly consisted of peanut butter and jelly sandwiches, Kraft macaroni and cheese, and Pop-Tarts.
Fast forward to my sophomore year of high school, when I was diagnosed with depression and prescribed medication. Over the next few years, my energy tanked and my mood spiraled out of control. I would go to the doctor and they would prescribe more meds. Rinse and repeat. By the time I graduated from college, I was taking a prescription cocktail that made me feel like I was going to crawl out of my skin!
Seemingly unrelated to all this, my biofeedback technician mentioned a wheat sensitivity came up on the machine. I felt like I had exhausted every other option, so I tried eating gluten free. Within months, I stopped taking all my medications; the brain fog cleared, my mood stabilized, and I slept through the night. Turns out the neurological symptoms I was experiencing were a result of malnutrition from years of undiagnosed gluten intolerance.
A year or so later, I started experimenting with whole foods nutrition. That was when I really felt what it was like to not just scrape by, but to actually thrive! I shared pictures of the yummy, healthy food I was eating on social media. People would ask me for advice and recipes. I started wellness coaching and hosting weight loss challenges so I could help others on their own transformational journey.
In 2014, I expanded my education by enrolling at the Institute of Transformational Nutrition. I was attracted to this program because it took a holistic approach to nutrition. The courses didn’t just cover the science of nutrition, I also learned about the the psychology and spirituality of nutrition.
